On Thursday, we’ll be pouring Blade and Talon wines with winemaker Nat Wong, a rising talent known for working with unconventional varieties and making them shine. Nat has an incredible ability to showcase the true character and typicity of rare grapes like Cabernet Pfeffer and Ruché, crafting wines that are both distinct and deeply expressive—all while pushing the boundaries of California winemaking in the best way possible.

Beyond the cellar, Nat is also a knife collector and ornithologist, passions that are reflected in the name Blade and Talon—a nod to finesse, craftsmanship, and the raw beauty of nature. His wines, much like his interests, are sharp, distinctive, and full of character. 

Unfortunately, he won’t be bringing any birds of prey to the tasting, but the precision and sharpness of his wines will surely take flight!
