The story of Lindenlaub is the common story of Alsatian winemaking. Since the late 1700s, the family has been farming and growing grapes in the small village of Dorlisheim. They were still raising cows and other livestock when, in 1986, Christophe’s father decided to bottle and sell their own wines. When Christophe took the reins in 1999, he forged a defined path for the domaine: organic farming, no fining, no filtration, and producing wines brimming with energy. And the energy in his Pet Nat of 100% Auxerrois? Pure, bubbly joy: dried apricot, fresh stone fruit, citrus, turmeric, fennel, and smoked sea salt.
