When Christophe Aguilar took over his family’s winery in 1998 (based in southern France near Avignon), he prioritized certified organic farming: “I realized I needed to stop poisoning myself with the chemical treatments we were using, as I felt worse and worse when working in the vineyards”. We believe in the farming and winemaking Christophe does, and the chillable Patience rouge (primarily Carignan and Syrah) is a perennial favorite. Planted on sandstone and fermented and aged only in stainless steel tank (no barrel!), this is the crunchy, fresh side of Carignan & Syrah, with bright red berry fruit balanced out by thirst quenching acidity. Best served chilled, with just about anything! Yum.
