Stéphanie Debout and Vincent Bertin fell in love with the Loire Valley by biking through and drinking wine at its best bistrots. Not satisfied by their Parisian lives, they felt the urge for a ‘retour à la terre’. Fast forward a little more than a decade to this wine, 100% Pineau d'Aunis that is pale red, just shy of a rosé. Harvest is by hand, grapes are foot stomped, fermentation is via indigenous yeast, and the wine is bottled without filtration or SO2. The vineyards are certified organic, plowed by horse, there is no machinery at all in the winery. This is true natural winemaking. And what does that create? A wine with soaring, zippy red berry fruit and cracked white pepper; Floral, fresh and appetizing!
