Northern Italian-born winemaker Emilio Castelli has put a hidden message on his label: “Nunquam Spuimos...” Latin for “we never spit.” An absolute unicorn of a wine: organic and dry-farmed Russian River *Nebbiolo*?! (You can take the boy out of Northern Italy, but....) Textbook Nebbiolo – structured but light, with lively tannins and aromatics galore: dried red berries, rose and violet and a deep earthy mushroom. Full flavors of dried cherry and cranberry with savory notes of licorice root, fennel seed and a lengthy, structured finish. Some of the best farming in all of Sonoma yields some of the coolest wine (who'dathunk?) - so drink slowly and never spit!
