Carboniste co-founder Dan Person trained at Schramsberg and -- yes, you can gasp here -- DRC. So maybe he knows a little something about what the French call "équilibre." But as much as he likes balance? He also admires the exuberance of Californian fruit, and the honoring of place: so his goal with Carboniste is to showcase the sunshine that makes Cali, well, Cali. This is his flagship wine -- the Octopus -- and it's made from Albariño grapes sourced from Andrus Island in the Sacramento River: a bright, citrus-inflected and seaspray-splashed delight.
