Hands down, without a doubt, unquestionably the best biodynamic winery in the Wachau. Which makes sense because they are Austria’s oldest winery with 2,000 years behind them and the first to be Demeter certified, in the world. When I was lucky enough to visit, and experienced love at first sip, they told me they had a room devoted to aging magnum bottles… at that point I was taking tips on life goals. Nikolaihof only ferments their wines with native yeast until dry – which means they are never released until ready. As a fellow late-bloomer, I GET THIS WINE.
